Easy Recipes for Fancy Toast (Yes, Including Avocado)

There’s really no easier meal than toast. All you need is a piece of bread and a toaster, right? Technically yes, but it can, and should, be so much more than just a piece of bread.

Toast toppings are just about endless, and whether you prefer a sweet or savory breakfast there’s a way for everyone to enjoy it. You can pretty much top a slice of toast with anything you have in your fridge already, it’s the combination of ingredients that may be new to you. Nothing complicated, nothing too fancy, no extra frills needed. You can prepare the rest of the ingredients in the time the bread is toasting for a five minute breakfast that’s easy, healthy and delicious.

Remember though, toast doesn’t only have to be for breakfast. These make great snacks and even a light lunch with something extra on the side. Feed more than yourself with a “Toast Bar” and lay out multiple topping options for everyone to create their favorite combination.

Blueberry Cream Toast

What do you need?

1 slice bread of your choice*
Tbsp Cream cheese or Ricotta Cheese
tsp Honey
Handful of Blueberries

What do you do?

Toast your bread to a medium crisp.
While the bread is toasting… stir together the cream cheese or ricotta and honey. Spread it onto the toast and top with blueberries. Drizzle some extra honey on top and enjoy!

Elvis-Style Toast

What do you need?

1 slice bread of your choice*
Tbsp Peanut Butter
Half of a Banana
tsp Sunflower seeds
tsp Cinnamon
Optional: Honey

What do you do?

Toast your bread. While it’s toasting, slice your banana. You’ll need about 8-10 slices. Top your warm bread with peanut butter, then lay out the bananas, then sprinkle on cinnamon and sunflower seeds. Can’t go wrong with this protein rich, filling breakfast that I personally have almost every other day. Drizzle some honey for even more sweetness.

Sweet & Savory Avocado Toast

What do you need?

1 slice bread of your choice*
Half an avocado
4 Strawberries
Tbsp Crumbled goat cheese
Balsamic Vinegar

What do you do?

Toast the bread. While it’s in the toaster, smash half an avocado with a tiny pinch of salt and pepper and then slice the strawberries nice and thin. Spread avocado mash on the slice of bread, top with the strawberries, goat cheese and drizzle balsamic vinegar on top. This toast has a little bit of everything! Enjoy!!

Ham & Cheese French Toast Roll Up

What do you need?

1 slice bread of your choice*
1 slice of ham
1 slice of cheddar cheese
1 Egg
Tbsp Milk
Pinch of cinnamon
Pat of butter
2-4 Toothpicks

What do you do?

Whisk together egg, milk and a pinch of salt, pepper & cinnamon. Take your bread slice and flatten it out a bit, top with a slice of ham and a slice of cheese, roll together and secure with 2 or 3 toothpicks. Dunk into the egg mixture and place onto a HOT pan with melted butter. Cook until outside is golden brown and cheese is melted. Enjoy!

*While any bread you like would work in these recipes, I recommend a thick, seeded whole wheat bread, like Arnold’s Extra Seedy or Ezekiel Bread. I swear by it.
